This is a traditional Slovak dish called brinzovej harški.
Mash potatoes, roll them into small balls, boil them, and toss them with cheese, then top with crispy bacon.
Cheese, especially sheep's, is used, but in Slovakia, freshly squeezed cheese is often used and cannot be preserved, so it is difficult to bring this authentic taste out of the country.
It is truly a traditional dish with deep local roots.
